In Turkey it's only possible to have a civil ceremony with no religious content. A civil ceremony can be held anywhere, subject to the discretion of the local registrar.
What about the language barrier?
The wedding ceremony will be held in Turkish, so it's advisable to arrange for an interpreter. The British Embassy should be able to help you with a list of contacts.

Best time to marry in Turkey?
Turkey has a changing climate depending on where in the country you are. Most of the tourist spots lie along its beautiful Mediterranean coastline and these areas share similar weather conditions to neighbouring Greece and Cyprus.
Summers are dry and tend to last longer than more Northern Mediterranean hot spots like Spain and Italy. But even when its at its hottest, the coastal breezes stop it from becoming unbearable.
Most of Turkey has a very bright, sunny climate even in winter.
